Carrot cake is HIGHLY UNDERRATED and these muffins are dedicated to all you carrot cake lovers out there. They are gluten-free, vegan, refined sugar-free, and unbeleivably moist and delicious.

Oh and did I mention they are made IN A BLENDER?! Yup that’s right – not only does the blender do all the hard work for you, it also makes clean-up a dream.

The cinnamon and nutmeg give such a warm and cozy feeling. The coconut offers nuttiness and an amazing texture. The carrots add the perfect amount of sweetness, and moisture to the muffins, and pretty much I could go on and on all day about why these are THE BEST MUFFINS EVER!!!! Plus its a perk you can get eat your veggies in such a fun and delicious way!

Let’s talk ingredients you’ll need. There are quite a few, but again, the blender does the work for you, so all you have to do is gather the ingredients and throw them in!

🥕 baking powder and soda

🥕 salt

🥕 cinnamon

🥕 nutmeg

🥕 almond milk

🥕 almond butter

🥕 vanilla extract

🥕 maple syrup

🥕 grated carrots

🥕 unsweetened shredded coconut

🥕 walnuts

🥕 raisins

Healthy Blender Carrot Cake Muffins

Ingredients

  • 2 ½ cups rolled oats gluten free
  • 2 tbsp flax seeds
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 2 tsp cinnamon
  • ½ tsp nutmeg
  • 1 ½ cups almond milk
  • cup almond butter
  • 1 tsp vanilla extract
  • ½ cup maple syrup
  • 1 ½ cups grated carrots (2-3 large carrots)
  • cup shredded coconut flakes unsweetened
  • cup chopped walnuts optional
  • cup raisins also optional

Instructions

  • Preheat the oven to 375 F and line a muffin tin with liners or spray your nonstick muffin tin
  • Add oats, flax, baking soda, baking powder, salt, cinnamon, nutmeg into the blender and blend until a fine consistency 
  • Add the almond milk, almond butter, vanilla, and maple syrup and blend again until smooth
  • Fold in the grated carrots, walnuts, raisins, and coconut
  • Evenly pour the batter into the muffin tray
  • Bake for 18-20 minutes, until a toothpick inserted in the middle comes out clean
  • Let cool completely if frosting (any frosting will be great, but I personally love drizzling some peanut butter over them!)
  • ENJOY!
