Coffee Cake Loaf (vegan & GF)

One of my all time favorite recipes i've made! A healthy crowd-pleaser 🙂

For the Cake

  • 2 ½ cups all purpose gluten free flour
  • ¼ cup coconut sugar
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla extract
  • cup coconut yogurt or any dairy free yogurt
  • 1 ¼ cup almond milk or any dairy free milk
  • cup cashew butter or almond butter

For the Crumble Topping

  • ½ cup gluten free flour
  • cup coconut sugar
  • 1 tbsp cinnamon
  • ¼ cup walnuts chopped
  • cup coconut oil softened
  • 1 tsp vanilla extract


  • preheat the oven 350 degrees and spray / line a loaf pan
  • in a large bowl, whisk together the fry ingredients & then add in the remaining ingredients, stirring until a thick batter forms (try not to over mix) & set aside
  • meanwhile, make the streusel by adding all the strudel ingredients together in a bowl with your hands or a fork until little pieces of the coconut oil are there, but it is still totally combined
  • pour half of the cake batter into your pan and then layer half of the streusel mix over that. Repeat with the other half of the batter, topping it with the remaining streusel 
  • bake for 1 hour or until a toothpick comes out clean, allow to cool before slicing, and ENJOY!! 
  • I usually store my loads in the fridge
