Soft Pumpkin Cookies

These soft and pillowy cookies are perfect for the fall!

  • 3/4 cup almond flour
  • 3/4 cup oat flour
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/4 tsp cinnamon
  • 1/2 cup pumpkin puree
  • 2 tbsp coconut oil melted
  • 1/4 cup maple syrup
  • 1/2 tsp vanilla
  • 1/3 cup walnuts chopped
  • 1/3 cup dark chocolate chips or chunks


  • Preheat oven to 350 degrees and line a baking sheet with parchment paper
  • Combine the first 7 dry ingredients in a medium bowl and stir until evenly combined. Add the rest of the ingredients (aside from the chocolate chips) and stir until evenly incorporated. Fold in chocolate chips and walnuts if using
  • Measure out cookie dough with a tablespoon and evenly place on a baking sheet (these cookies spread a little but not too much). Bake for 8-10 minutes until the bottoms are a light golden brown. Allow cookies 5 minutes to cool on the tray before transferring to wire rack
