Salted Cowboy Cookies (gluten-free & vegan)

This healthier version of Kitchen Sink Cookies has the perfect balance of salty, sweet, soft, and crunchy! They are sure to be a crowd pleaser!

Healthier Cowboy Cookies (gluten-free & vegan)

  • 1/4 cup unsweetened applesauce
  • 1 tbsp ground flaxseed
  • 3 tbsp water
  • 2 tbsp avocado oil or other neutral oil
  • 1/3 cup coconut sugar
  • 1 1/2 cups rolled oats gluten free
  • 3/4 cup all purpose gluten free flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup chocolate chips
  • 1/2 cup gluten free pretzels chopped
  • flaky sea salt for topping


  • Preheat your oven to 350┬║F
  • Add the applesauce, flax, water, oil, sugar, and vanilla to a large mixing bowl, mixing until combined
  • Add the oats, flour, cinnamon, baking soda, and salt, mixing until fully incorporated
  • Fold in the chocolate chips and pretzel pieces
  • Roll dough into balls of about two tbsp, place on a nonstick cookie sheet, and flatten each cookie slightly
  • Bake for 5 minutes then take the tray out of the oven and bang it a few times on the counter so the cookies flatten and spread more
  • Place them back in the oven for another 5 minutes or until the edges begin to turn golden brown
  • Remove your cookies from the oven and let them cool for a few minutes before eating, sprinkle with flaky sea salt, and ENJOY! (they are best enjoyed warm and fresh, but can be stored in an airtight container for about a week!)
