Healthy Copycat Samoa Cookies

Four ingredients, gluten-free, vegan & refined sugar-free (small batch)

Ingredients

  • 1 ripe banana
  • 1 cup unsweetened coconut flakes
  • 1 tsp vanilla extract
  • 1/2 cup dark chocolate melted

Instructions

  • Preheat oven to 350
  • In a medium bowl, mash banana and mix in coconut and vanilla
  • Roll dough into 2 tbsp balls, flatten with your palm on a cookie sheet, and with your pointer finger, poke a hole in the center and wiggle until the cookie resembles the classic Samoa shape
  • Bake for 20 minutes, until golden brown
  • Remove from oven, allow cookies to cool, and drizzle with melted chocolate
