Healthier Oatmeal Raisin Cookies

Oatmeal raisn cookies are wayyyy too underrated, so if you like them as much as me, then this healthier version is one you have to try! They are gluten free and refined sugar free so everyone can enjoy them!

Ingredients

  • 1 1/2 cups rolled oats gluten free
  • 1/2 cup gluten free all purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup applesauce
  • 2 egg whites lightly beaten
  • 1/4 cup honey or maple syrup
  • 1 tbsp vanilla extract
  • 1/2 cup raisins

Instructions

  • Preheat oven to 350
  • In a medium bowl, add oats, flour, baking powder, baking soda, salt, cinnamon and nutmeg and mix thoroughly
  • In a separate bowl, combine applesauce, egg whites, honey and vanilla
  • Add wet ingredients to dry ingredients and mix just until incorporated. Fold in raisins
  • Use about 1 tablespoon of batter per cookie and drop onto baking sheet. Press down lightly with fingers to slightly flatten cookies
  • Bake for 12 to 15 minutes. Let cool and enjoy!!!
