Healthier Lemon Cookies

i’m obsessed with lemons and pretty much anything lemon flavored (especially in the summer!) These cookies turned out so pillowy, soft, light, and fluffy and you can’t go wrong with that!!

  • 2 cups almond flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 3 tbsp coconut oil melted
  • 4 tbsp honey
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • zest of one lemon


  • 1/2 cup powdered sugar
  • 1 tbsp lemon juice
  • 1 tsp lemon zest


  • Preheat oven to 350 and line a cookie sheet with parchment paper
  • In a large mixing bowl, add all the ingredients and stir until well combined
  • Roll / scoop cookies into balls about 2 tbsp each
  • Place each cookie dough ball on the baking tray, leaving at least 1 inch in between each cookie
  • Press each ball down slightly to flatten and then bake for 15 minutes or until the sides of the cookies are slightly golden brown
  • Cool for at least 10 minutes on the tray and then you can transfer the cookies to a cooling rack
  • To make the glaze: combine powdered sugar, lemon juice, and lemon zest
  • Once your cookies are cold, dip them into the glaze and then refrigerate for at least one hour until the glaze sets (& store in fridge) and ENJOY
