Dark Chocolate and Almond Butter Cookies

  • 1 cup almond butter
  • 1/4 cup cocoa powder
  • 2/3 cup coconut sugar
  • 1/2 tsp vanilla
  • 1 flax egg or normal egg
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 cups dark chocolate chips


  • preheat the oven to 350
  • in a large bowl or using a stand mixer, beat together the almond butter, coconut sugar & vanilla
  • in a separate bowl, sift together the cocoa powder, salt and baking soda
  • add the dry ingredients to the wet, slowly and steadily and mix until just combined
  • then add in the flax egg and beat until just combined
  • fold in the dark chocolate chips
  • using a cookie scooper, measure out about a tablespoon of dough and roll the dough in your hands to form a ball
  • place on the pan and gently flatten with your hands
  • bake for about 7 minutes (they burn easily – I learned that the hard way lol)
  • let them cool for about 10 min & enjoy
