Copycat Girl Scout Thin Mints

Nothing against Girl Scouts, but these are 100000 times better than the real thing and they are gluten-free, vegan, & refined-suagr free! This is a small-ish batch, so feel free to double it!

Ingredients

  • 1 cup almond flour
  • 2 tbsp cacao powder
  • 1 tbsp maple syrup
  • 1/4 tsp salt
  • 1/2 tsp peppermint extract
  • 2 1/2 tbsp coconut oil melted

For chocolate coating

  • 1 bar dark chocolate melted
  • 1/4 tsp peppermint extract

Instructions

  • Preheat the oven to 350 and line a baking sheet with parchment
  • In a large bowl, mix all the ingredients until well combined
  • Scoop dough into tablespoon size balls, roll them, and then flatten into that classic shin mint shape
  • Bake for 15 minutes
  • Let cool
  • While cooling, make chocolate coating by melting your chocolate bar and stirring in the peppermint extract
  • Dip cookies into the chocolate, refrigerate or freeze for at least 15 minutes to let it set & then enjoy!

Notes

This is a small-ish batch recipe (only makes 8 cookies) so feel free to double the recipe if you want more!
