Healthy Apple Cranberry Crisp for Two

Ingredients

Filling

  • 1 large apple, sliced thin or two medium / small
  • 1/3 cup cranberries fresh or frozen
  • 1 tbsp maple syrup
  • 1/2 tsp lemon juice
  • 1/2 tsp cinnamon
  • 1/2 tsp arrowroot powder or cornstarch

Crisp Topping

  • 1/3 cup rolled oats gluten free
  • 1/3 cup walnuts chopped
  • 1/3 cup almond flour
  • 1/4 tsp salt
  • 1/2 tsp cinnamon
  • 3 tbsp maple syrup
  • 3 tbsp coconut oil melted

Instructions

  • Preheat the oven to 350F
  • In a medium bowl, combine all of the ingredients for the filling
  • Add this mixture into a small cast iron skillet
  • In a seperate bowl, whisk together the walnuts, oats, almond flour, salt, and cinnamon
  • Stir in the coconut oil and maple syrup until well combined
  • Spread the topping evenly ontop of the apple cranberry mixture
  • Bake for 30 minutes, or until topping is golden

Notes

Store leftover in the fridge
