Healthy Banana + Peanut Butter Muffins

gluten free, vegan, refined-suagr free, fluffy, and delicious!
Servings 10 muffins


  • 2 ripe bananas
  • 1 flax egg
  • 1/2 cup coconut oil melted, and cooled
  • 1/2 cup peanut butter creamy, natural
  • 1/2 cup coconut sugar
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup almond flour
  • 1/2 cup oat flour
  • 2 tsp baking soda
  • 1/4 cup unsweetened almond milk


  • preheat the oven to 350 and spray or line a muffin tin with 10 liners
  • add bananas to a large bowl and mash with a fork. stir in the flax egg, coconut oil, coconut sugar, peanut butter, vanilla and salt and mix well
  • add the almond flour, oat flour, baking soda and almond milk and stir until smooth
  • divide the batter evenly among the 10 muffin cups and bake for 25 minutes
  • drizzle with some more pb (duhhhh) & enjoy!
  • store at room temperature for up to 3 days, then refrigerate or freeze
